Wusthof's Gourmet collection of knives are crafted using a stamping process that produces a lighter feel. Triple-rivet construction permanently secures the handle to tang for long-lasting durability and the precision blade is forged from one solid piece of high-carbon stainless steel and tempered to maximum sharpness. The 7#double; Santoku knife allows you to make thin, clean slices. The hollow grind side of the blade allows air pockets to form so meat does not stick to the blade. This also allows for less friction in cutting which lets more juice from the meat remain in the meat. Dishwasher safe; hand washing recommended.
The Santoku is a cross between a cook's knife and a vegetable cleaver, it has a thinner angle to allow for a very sharp and thin cut.
