So easy to make, just add 2 eggs, 2 tablespoons of vegetable oil and fluffy light matzo balls are at the ready. Directions
You Will Need: a small bowl, 2 eggs, 2 tbsp vegetable oil; To Cook: 10 cups (2-1/2 quarts) cold water; 4 quart pot.
1. Mix in a bowl 2 eggs and 2 tablespoons vegetable oil. Add contents of one packet and stir with a fork until evenly mixed. Chill in refrigerator for about 15 minutes.
2. In the meantime, pour 10 cups (2-1/2 quarts) water into pot and bring to a brisk boil. Add salt if desired. Remove chilled matzo ball mixture from refrigerator. Wet hands and form batter into matzo balls, approximately 1 inch in diameter.
3. Drop matzo balls into boiling water. Cover tightly. Reduce heat and simmer until thoroughly cooked, about 20 minutes. Each packet makes: 9-12 matzo balls.
